Cheesy Sweetcorn and Bacon Bread

Cheese, Corn & Bacon – this quick bread is flop-proof and a must-have to take along to a braai! Serve it with butter, and you’ll be left with a clean dish.

Ingredients

  • 625 ml (2 1/2 cups) cake flour
  • 10 ml (2 tsp) baking powder
  • 15 ml (1 Tbsp) Food Lover’s sugar
  • 5 ml (1 tsp) salt
  • 4 large eggs
  • 125 m (1/2 cup) butter, melted
  • 250 ml (1 cup) buttermilk
  • 250 g Food Lover’s bacon, diced 250 ml
  • (1 cup) Food Lover’s cheddar cheese, grated
  • 1 tin Food Lover’s Signature sweetcorn kernels
  • 1/2 tin Food Lover’s Signature cream style sweetcorn

Directions

  1. Preheat oven to 180°C.
  2. Grease a 1 x 30 cm loaf tin
  3. Fry the chopped bacon in a pan over high heat until it is crispy.
  4. Once cooked, set aside to drain on paper towel.
  5. In a mixing bowl, sift together all the dry ingredients. In a separate bowl, beat the eggs, melted butter, and buttermilk.
  6. Pour this mixture into the bowl with the dry ingredients and mix well.
  7. Add the corn, creamed sweetcorn, bacon pieces, and grated cheese.
  8. Gently mix these ingredients into the batter. Pour the mixture into a greased loaf tin.
  9. Bake for approx 1hr 15 mins until it is golden brown.
  10. Insert a skewer into the centre of the loaf and if it comes out clean, the bread is ready.
  11. Remove it from the oven and allow it to cool before removing it from the tin.

Notes

*Remove the bacon if you are vegetarian and add some crispy onion to some texture.
