Cheesy Sweetcorn and Bacon Bread

Cheese, Corn & Bacon – this quick bread is flop-proof and a must-have to take along to a braai! Serve it with butter, and you’ll be left with a clean dish.

- 625 ml (2 1/2 cups) cake flour
- 10 ml (2 tsp) baking powder
- 15 ml (1 Tbsp) Food Lover’s sugar
- 5 ml (1 tsp) salt
- 4 large eggs
- 125 m (1/2 cup) butter, melted
- 250 ml (1 cup) buttermilk
- 250 g Food Lover’s bacon, diced 250 ml
- (1 cup) Food Lover’s cheddar cheese, grated
- 1 tin Food Lover’s Signature sweetcorn kernels
- 1/2 tin Food Lover’s Signature cream style sweetcorn
Directions
- Preheat oven to 180°C.
- Grease a 1 x 30 cm loaf tin
- Fry the chopped bacon in a pan over high heat until it is crispy.
- Once cooked, set aside to drain on paper towel.
- In a mixing bowl, sift together all the dry ingredients. In a separate bowl, beat the eggs, melted butter, and buttermilk.
- Pour this mixture into the bowl with the dry ingredients and mix well.
- Add the corn, creamed sweetcorn, bacon pieces, and grated cheese.
- Gently mix these ingredients into the batter. Pour the mixture into a greased loaf tin.
- Bake for approx 1hr 15 mins until it is golden brown.
- Insert a skewer into the centre of the loaf and if it comes out clean, the bread is ready.
- Remove it from the oven and allow it to cool before removing it from the tin.
Notes
*Remove the bacon if you are vegetarian and add some crispy onion to some texture.
