3 Bubbly Cocktails for celebrations

Popping open a bottle of bubbly (MCC or Champagne) for a celebration is always a good idea. Ingredients

Cherry and Candy Cane:

  • 300g Food Lover’s Cherries, de-pitted
  • 15ml (2 tsp) sugar
  • 15ml (2 tsp) water
  • 750ml (3 cups) sparkling wine or MCC
  • 86g Food Lover’s Market Mini Candy Canes, roughly crushed
  • 1 egg white, beaten
  • 4 candy canes, for garnishing

Ginger and Thyme:

  • 15cm ginger piece, peeled and thinly sliced
  • 10g fresh thyme
  • 15ml (1 Tbsp) sugar
  • 15ml (1 Tbsp) water
  • 750ml (3 cups) sparkling wine or MCC
  • Fresh thyme, for garnishing

Peach and Spice:

  • 2 ripe peaches, pitted and roughly cut
  • 1 cinnamon stick
  • 4 cardamom pods
  • 2 whole star anise
  • 4 whole cloves
  • 4 whole allspice
  • 5ml (1 tsp) sugar
  • 60ml (1/4 cup) water
  • 750ml (3 cups) sparkling wine or MCC
  • Cinnamon sticks, to garnish
  • Peach slices, to garnish

Directions

Cherry and Candy Cane:

  1. In a small saucepan over high heat, add the pitted cherries, sugar and water and bring to a boil. Once boiling, turn the heat down to low and simmer for 8-10 minutes. Allow to cool, then blend until smooth.
  2. Place the crushed candy cane onto a plate and dip the rim of the glass into the beaten egg white, followed by the crushed candy cane.
  3. Spoon 15 ml (1 Tbsp) of the cherry mixture into the bottom of the glass and carefully pour the sparkling wine into the glasses. Place a candy cane on the rim and enjoy.
  4. Ginger and Thyme:

    1. In a small saucepan over high heat, add the ginger, thyme, sugar and water and bring to a boil. Once boiling, turn the heat down to low and simmer for 10-15 minutes. Allow to cool, then blend until smooth. Strain and set aside.
    2. Spoon 5-10 ml of the ginger and thyme mixture into the bottom of your chosen cocktail glasses and carefully pour the sparkling wine into the glasses. Garnish with fresh thyme and enjoy.
    3. Peach and Spice:

      1. In a small saucepan over high heat, add the peach pieces, spices, sugar and water and bring to a boil. Once boiling, turn the heat down to low and simmer for 10-15 minutes. Allow to cool, remove the spices, then blend until smooth. Strain and set aside.
      2. Spoon 15 ml (1 Tbsp) of the peach and spice mixture into the bottom of your chosen cocktail glasses and carefully pour the sparkling wine into the glasses. Garnish with the peach slices and cinnamon sticks and enjoy.
