Turkey Salad with Orange, Sesame & Cherry Dressing

For the salad:
- 500ml (2 cups) leftover turkey meat, skin removed and shredded
- 250ml (1 cup) mixed nuts
- 250ml (1 cup) dried cranberries
- 250ml (1 cup) fresh baby leaf salad/mixed salad leaves
- 30ml (2 Tbsp) fresh mint, torn
- 30ml (2 Tbsp) fresh coriander, chopped
- 1/2 red onion, thinly sliced
- 30ml (2 Tbsp) sesame seeds, toasted
For the dressing:
- Zest and juice of 1 orange
- 250ml (1 cup) cherries, pitted
- Zest and juice of 1 lime
- 5ml (1 tsp) sesame oil
- 15ml (1 Tbsp) soy sauce
- 5ml (1 tsp) fresh ginger, grated
- 30ml (2 Tbsp) olive oil
Directions
For the salad:
- Heat a pan on a medium heat with a drizzle of olive oil. Add the turkey meat, nuts and cranberries – fry until heated and the nuts are toasted.
- Remove from heat, season and allow to cool. Once cooled, add the mint and coriander.
- In a bowl, lightly toss salad leaves, turkey meat, red onion and salad dressing. Serve with toasted sesame seeds.
- Combine all ingredients in a blender and blend until smooth.
