Turkey Salad with Orange, Sesame & Cherry Dressing

Cheeky cherries paired with Umami Soy Sauce and zesty citrus make this salad dressing a festive win with flavours of Asia.The leftover turkey and stuffing will taste like a brand new dish, packed with flavour.

Ingredients

For the salad:

  • 500ml (2 cups) leftover turkey meat, skin removed and shredded
  • 250ml (1 cup) mixed nuts
  • 250ml (1 cup) dried cranberries
  • 250ml (1 cup) fresh baby leaf salad/mixed salad leaves
  • 30ml (2 Tbsp) fresh mint, torn
  • 30ml (2 Tbsp) fresh coriander, chopped
  • 1/2 red onion, thinly sliced
  • 30ml (2 Tbsp) sesame seeds, toasted

For the dressing:

  • Zest and juice of 1 orange
  • 250ml (1 cup) cherries, pitted
  • Zest and juice of 1 lime
  • 5ml (1 tsp) sesame oil
  • 15ml (1 Tbsp) soy sauce
  • 5ml (1 tsp) fresh ginger, grated
  • 30ml (2 Tbsp) olive oil

Directions

For the salad:

  1. Heat a pan on a medium heat with a drizzle of olive oil. Add the turkey meat, nuts and cranberries – fry until heated and the nuts are toasted.
  2. Remove from heat, season and allow to cool. Once cooled, add the mint and coriander.
  3. In a bowl, lightly toss salad leaves, turkey meat, red onion and salad dressing. Serve with toasted sesame seeds.
  4. For the dressing:

    1. Combine all ingredients in a blender and blend until smooth.
