Powerless (Loadshedding-friendly) Pilchard Salad

Loadshedding is a part of our daily life, but not an excuse to order pizza! Try this super affordable,  healthy pilchard salad – no electricity required!

Ingredients

    2 x 400g tins of tomato pilchards
    1 tub of cocktail tomatoes
    1 cucumber
    1 pack of baby spinach
    1 pack of 2-minute noodles
    Avocado (*optional)

Directions

    Cut up the cucumber into chucks and the tomatoes into halves.
    Throw the cut up tomato and cucumber, pilchards, baby spinach leaves into a bowl and mix.
    Just before serving, crush up the 2 minute noodles over the salad for a good crunch.
