Berry Chia Pudding

This healthy protein-packed and fresh fruit chia pudding is so good it could be used as a light dessert, or delicious breakfast. Like overnight oats, chia can soak overnight, or you can cook it over a stove top.

Ingredients

Pudding

    ½ cup (125ml) chia seeds
    1 cup (250ml) almond milk
    1 cup (250ml) coconut milk
    1 teaspoon (5ml) honey
    A handful of strawberries, sliced
    A handful of blueberries
    ¼ cup (60ml) pistachio nuts, shelled and chopped
    Edible flowers (optional)

Directions

Pudding

    Add the chia seeds and almond milk to a saucepan over medium heat. As the chia seeds begin to soak up the liquid add the coconut milk and honey; cook for 10 minutes. (Alternatively, skip the cooking and allow for soak overnight).
    In the meantime, prepare the pudding toppings.
    Divide the chia mixture into bowls and decorate with the strawberries, blue berries, pistachios and edible flowers.
