Quinoa Summer Salad with Peach Dressing

With an abundance of Summer fruit in stores,  why not add it to your fresh salads or blend them into a dressing. This peach dressing is the perfect accompaniment to any fresh Summer salad. Here, we’ve paired it with a quinoa and stone fruit salad.

We suggest you double up the recipe and keep the rest in the fridge for later. Just remember to shake or whisk again before use.

Ingredients

For the Salad:

  • 250ml (1 cup) red and white quinoa
  • 1 cucumber, chopped
  • 2 bell peppers, seeds removed and chopped
  • 2 nectarines, stones removed and chopped
  • 2 plums, stones removed and chopped
  • 2 spring onions, sliced diagonally
  • Fresh basil and mint, torn

For the Peach Dressing:

  • 2 peaches, stones removed and chopped
  • 125ml (1/2 cup) avocado oil
  • 60ml (1/4 cup) fresh lemon juice
  • Zest of 1 lemon
  • 5ml (1 tsp) wholegrain mustard
  • Salt and black pepper, to taste

Directions

For the Salad:

  1. Cook the quinoa according to the packet instructions, drain and allow to cool before use.
  2. Combine the cooled quinoa with the cucumber, peppers, stone fruit and spring onions.
  3. Top with torn fresh herbs.
  4. For the Peach Dressing:

    1. Place all ingredients into a blender and blend until smooth and emulsified. Dress the salad with the dressing and serve on the side.

Notes

If you do not have avocado oil, use another oil of choice. We recommend Olive Oil, Macadamia Oil or Hemp Seed Oil.
