Chocolate Chip and Multi-Seed Flapjacks

Inspired by one of our favourite heroes, Spider-Man, these chocolate chip and multi-seed flapjacks are perfect for a lunch box or weekend brunch. These flapjacks are simple, with added omega 3’s and 6’s from the mixed seeds. A blend of oat flour (or flour of choice), with just a touch of sugar, and your usual flapjack suspects to give some power to your packed lunch.

Ingredients

  • 500ml (2 cups) oat flour, spelt flour or stoneground flour
  • 30ml (2 Tbsp) castor sugar
  • 1ml (2 tsp) baking powder
  • 1.25ml (1/4 tsp) salt
  • 250ml (1 cup) milk
  • 2 eggs
  • 60ml (1/4 cup) butter, melted
  • 125ml (1/2 cup) dark chocolate chips, or chopped chocolate
  • 125ml (1/2 cup) You First Essential 4 Seed Mix

Directions

  1. In a large mixing bowl, combine the dry ingredients and mix well. Add the milk, eggs and melted butter and whisk again until smooth. Lastly, stir in the chocolate chips.
  2. Heat a large frying pan over medium heat with 15 ml (1 Tbsp) of cooking oil. Spoon about a ¼ cup of the mixture for each flapjack into the pan and cook until golden brown. Repeat with the rest of the mixture.
