Butternut & Turmeric Pici Pasta

That TikTok Spinach Pici Pasta recipe has made pici pasta famous, but it’s always existed (WAY back to Etruscan times!), it’s just been made a trend, as TikTok does. Pici, or Pinci, (pronounced ‘Peechy’)), is a thick, hand-rolled pasta, like fat spaghetti. It originates in the province of Siena in Tuscany. It’s originally just made of flour and water. Like most trends, we need to try it ourselves, but our recipe developer went with turmeric and butternut pici pasta, paired with beautiful garlic and herb butter sauce.

PS: no pasta machine is needed.

Ingredients

For the Pici Pasta:

  • 150g butternut purée
  • 180g flour
  • 10ml (2 tsp) turmeric
  • 2.5ml (1/2 tsp) salt

For the Sauce:

  • 20ml (4 tsp) butter or Vegan Margarine
  • 1 clove of garlic, finely crushed
  • 250ml (1 cup) white wine
  • 80ml (1/3 cup) parmesan cheese, finely grated (or Vegan Parmesan Cheese)
  • Handful of fresh herbs, chopped
  • Salt and black pepper, to taste

Directions

For the Pici Pasta:

  1. Place all ingredients in a blender and pulse until well combined and a dough has formed. Using your hands, roll the dough into thin, long shapes of about 5 mm thick and 20 cm long.
  2. Boil the pici pasta for about 30 seconds in salted water. Reserve about 30 ml of the cooking liquid for the sauce. Strain and add the pasta to your sauce.
  3. For the Sauce:

    1. Heat a pan on a medium heat with a knob of butter until slightly browned. Fry the garlic for 1-2 minutes while stirring. Deglaze the pan with the white wine and reduce to 1/3 before adding 30 ml of the pasta’s cooking liquid.
    2. Add the parmesan cheese and herbs. Season to taste.
    3. Combine the sauce with the pasta and enjoy with a glass of white wine.
