Avocado on Toast – 3 ways!

Ingredients

Mexican Avo Toast

  • 4 slices of your favourite artisan bread
  • 1 ripe avocado
  • Zest and juice of 1 lemon
  • 125ml (1/2 cup) sweet corn
  • 1 wheel feta, crumbled
  • Salt and pepper, to taste
  • Herbs, to garnish

Egg-cellent Avo Toast

  • 4 slices of your favourite artisan bread
  • 1 ripe avocado
  • Zest and juice of 1 lemon
  • 2 boiled eggs
  • 1 spring onion, sliced thinly
  • Salt and pepper, to taste
  • Parsley or herbs to garnish

Crunchy Avo Toast

  • 4 slices of your favourite artisan bread
  • 1 ripe avocado
  • Zest and juice of 1 lemon
  • 15ml (1 Tbsp) linseeds
  • 15ml (1 Tbsp) white sesame seeds
  • 10ml (2 tsp) sunflower seeds
  • 10ml (2 tsp) pumpkin seeds
  • 10ml (2 tsp) smoked paprika
  • 10ml (2 tsp) chilli flakes

Directions

Crunchy Avo Toast

  1. Toast your bread to your liking in a pan with butter or in the toaster.
  2. Cut the avo in half and remove the pip. Scoop the avo flesh out with a spoon and place in a mixing bowl.
  3. Season well with salt and pepper and add the zest and juice of the lemon. Using a fork, roughly mash up the avocado.
  4. In a clean and dry pan, toast all the seeds and spices together until fragrant.
  5. Spread the avo on the toast and top with your crunchy mixture.
  6. Drizzle with olive oil and enjoy.
  7. Egg-cellent Avo Toast

    1. Toast your bread to your liking in a pan with butter or in the toaster.
    2. Cut the avo in halve and remove the pip, scoop the avo flesh out with a spoon and slice the avo into strips.
    3. Season with salt and pepper, lemon zest and juice.
    4. Place the avo slices on your toast and top with the boiled egg and spring onion.
    5. Season with salt and pepper and garnish with parsley and herbs.
    6. Mexican Avo Toast

      4. Mix the sweet corn and feta into the avo and place the avo mixture on the toast.
      5. Garnish with herbs and serve
