Beef Koftas with Pea & Coriander Hummus

Ingredients

For the Ground Beef Koftas:

  • 500g ground beef from our butchery
  • 10ml (2 tsp) ground cumin
  • A handful of mint, chopped
  • A handful of rosemary, chopped
  • A handful of flat-leaf parsley, chopped
  • 6 long rosemary stems
  • Salt and black pepper, to taste

For the Pea & Coriander Hummus:

  • 500ml (2 cups) frozen garden peas
  • 1 tin chickpeas, drained
  • 1 small garlic clove, grated
  • Zest and juice of 1 lime
  • Handful of coriander
  • Salt and black pepper, to taste

To serve:

  • Red onion slices
  • Coriander leaves
  • Extra peas
  • Lime wedges

Directions

For the Ground Beef Koftas:

  1. Mix together the ground beef, cumin, herbs and season well with salt and black pepper.
  2. Work the herbs and spices in with your hands and form the koftas around the rosemary stems.
  3. Place in the fridge for about 30 minutes, or until you are ready to fry them.
  4. Heat a large griddle pan and oil the koftas lightly.
  5. Fry the koftas on all sides for about 8-10 minutes in total, or until fully cooked to your liking.
  6. For the Pea & Coriander Hummus:

    1. Pour some boiling water over the frozen peas and drain within 1-2 minutes. Place all ingredients in a food processor and blend untill well combined.
    2. Season with salt and black pepper.
    3. Serve the ground beef koftas with the pea and coriander hummus.
    4. Garnish with red onion slices, coriander leaves, extra blanched garden peas and lime wedges.
