Caramelised Onion & Bacon, Potato Bake

Enjoy this creamy, cheesy potato bake, as an accompaniment to almost any other dish, or even as a meal all on its own. Who can resist this kind of comfort food? Here we have notched it up, by adding a bit of texture, with salty pieces of crispy bacon and caramelised onions for a hint of sweetness.

Ingredients

Potato bake

  • 6 large potatoes washed and cut into thin slices
  • 200 g bacon, diced
  • 2 med onions, peeled and thinly sliced
  • 3 tbsp sugar
  • 400 g cheddar cheese, grated
  • 3 cloves garlic, crushed
  • 2 tbsp fresh thyme leaves, chopped
  • 250 ml pouring cream
  • 150 ml sour cream
  • Freshly ground salt and pepper

Directions

Potato bake

  1. Heat a non stick frying pan and add the diced bacon.
  2. Saute the bacon until just crispy. Remove it from the pan and set aside.
  3. Heat olive oil in the same pan, then add the sliced onion, sugar and garlic.
  4. Fry over a gentle heat until the onions are tender and caramelised. Remove it from the heat and set aside. Oil a casserole dish or oven proof pan.
  5. Layer with slices of potato, season with freshly ground salt and pepper as well as a sprinkling of fresh thyme. Continue layering, with caramelised onion, bacon and a handful or two of grated cheese.

  7. Repeat this process twice, ending with a layer of grated cheese.
  8. Mix the cream and sour cream together in a jug.
  9. Pour this evenly over the potato dish.
  10. Cover loosely with tin foil and place in a pre heated, 200 C oven.
  11. Bake for 40-45 mins covered, then remove the tin foil and bake for a further 20-25 mins.
