Brie, Fig & Thyme Cob bread

This tear-and-share cob bread brings together everyone’s favourite flavours of fig, Fairview brie, walnuts and honey, in a cheesy, gooey yumminess! And its comfort is in its convenience and versatility. It’s a showstopper, yet it takes only minutes to make. It can be a snack before or after dinner, or it can even be a lazy meal for a warm December evening.

Ingredients

  • 1 large round sourdough bread or round bread of choice from the Food Lover's Bakery
  • 2 Fairview Brie cheese
  • 10 sprigs of fresh thyme
  • 100g roughly chopped walnuts
  • 5 preserved figs, cut into quarters
  • 100ml You First Raw Honey or Food Lover's Honey

Directions

  1. Preheat the oven to 180°c.
  2. Score the sourdough, without cutting through the base, turn the bread and slice again; to resemble criss-cross slices.
  3. Cut the Brie cheeses in half, and slice.
  4. Open up the incisions in the bread and insert the Brie slices. Ensuring the bread is cheesy.
  5. Top with chopped walnuts and sprigs of fresh thyme. Bake for 10 – 15 minutes, until the cheese has melted and the bread is crisp.
  6. Remove from the oven and scatter over the preserved figs and drizzle with honey.

Notes

What is cob bread?

Cob bread is a bread loaf, with a hearty thick crust. It is traditionally round with a diamond pattern on top. This bread is perfect to serve with brie, as the bread has a soft flavour that can’t overpower the mild brie.

Why pair figs and brie?

Brie loves being paired with sweet and juicy fruits, as they are a perfect balance to the creamy, earthy flavour of the brie.

Why use Walnuts?

Walnuts not only give that luxury eating experience that you expect from Christmas and other decent occasions, but it adds an extra element of crunch, which completes every highlight of this dish: sweet, umami, soft and crunchy, and sticky.
