Chai Spiced Poached Pears with Chocolate Sauce

Spice up your Autumn desserts! Pears are in season and we all know they love to be poached. This time, we spiced it up with some Chai spices in the poaching syrup. (We decided to enjoy the wine paired with dessert rather than using it as the poached liquid)

Poached pears are an easy and elegant dessert to serve after a rich meal since they won’t weigh you down quite like a slice of cake or pie.

Ingredients

For the Chai Spiced Poached Pears:

  • 4 pears, peeled and stem left intact
  • 500 ml (2 cups) light brown sugar
  • 500 ml (2 cups) water
  • 5 ml (1 tsp) all spice
  • 5 cardamom pods, crushed
  • 3 cloves
  • 2 cinnamon sticks

For the Chocolate Sauce:

  • 250 ml (1 cup) cocoa powder
  • 500 ml (2 cups) sugar
  • 5 ml (1 tsp) salt
  • 250 ml (1 cup) water
  • 10 ml (2 tsp) vanilla

Directions

For the Chai Spiced Poached Pears:

  1. Combine all the ingredients for the syrup in a medium saucepan and bring to a simmer.
  2. Place the peeled pears into the chai poaching liquid and place a cartouche over the pears and poach for about 8-10 minutes or until soft.
  3. Remove the pears from the poaching liquid and allow to cool.
  4. For the Chocolate Sauce:

    1. Combine all ingredients and whisk until well combined, cook on a medium heat for about 12-15 minutes or until thickened, whisking occasionally.
    2. Set aside to cool slightly before serving.
