Citrus-glazed Salmon with Country Stir Fry

Ingredients

  • 60ml (1/4 cup) soy sauce
  • 45ml (3 Tbsp) brown sugar
  • 5ml (1 tsp) sesame oil
  • 125ml (1/2 cup) vegetable stock
  • 15ml (1 Tbsp) corn starch
  • Olive oil
  • 2 garlic cloves, minced
  • 2 carrots, peeled and sliced into strips
  • 1 bell pepper, sliced into strips
  • 1 small purple cabbage, shredded
  • 1 cup Brussels sprouts, halved
  • 1 onion, sliced
  • Toasted sesame seeds, to garnish

For the Salmon:

  • 4 x 150g salmon fillets
  • Zest and juice of 1 lemon
  • Salt and pepper, to taste
  • Olive oil
  • 5ml (1 tsp) corn starch
  • 10ml (2 tsp) water
  • 3 garlic cloves, minced
  • 2 oranges, zested and juiced
  • 1 lemon, zested and juiced
  • 30ml (2 Tbsp) raw honey
  • 15ml (1 Tbsp) soy sauce
  • Handful fresh thyme

Directions

    Next, dry the salmon fillets with a paper towel. Season with salt, freshly ground pepper and lemon zest.
    Heat the olive oil in a frying pan over medium heat. Add the salmon and cook for 4-5 minutes on each side. Set aside when done.
    Reduce the heat of the pan and add the garlic. Fry for one minute. Add the orange juice, lemon juice, honey, soy sauce and thyme. Cook for 1-2 minutes while continuously whisking until the mixture becomes slightly thicker.
    Add the salmon back into the pan and glaze before serving hot.
    To assemble, serve the warm salmon with the orange glaze with your country stir fry.
    Top the stir fry with sesame seeds.

  1. Start by making the stir fry. In a medium bowl, combine the soy sauce, brown sugar, sesame oil, vegetable stock and corn starch. Whisk until well combined.
  2. Heat the olive oil in a large wok. Add all the prepared ingredients in the wok and fry over high heat for about 5 minutes.
  3. Set aside.
  4. Next, dry the salmon fillets with a paper towel.
  5. Season with salt, freshly ground pepper and lemon zest. Heat the olive oil in a frying pan over medium heat.
  6. Add the salmon and cook for 4-5 minutes on each side. Set aside when done.
  7. Reduce the heat of the pan and add the garlic. Fry for one minute.
  8. Add the orange juice, lemon juice, honey, soy sauce and thyme.
  9. Cook for 1-2 minutes while continuously whisking until the mixture becomes slightly thicker.
  10. Add the salmon back into the pan and glaze before serving hot.
  11. To assemble, serve the warm salmon with the orange glaze with your country stir fry.
  12. Top the stir fry with sesame seeds.

*Buy a prechopped stir fry mix if you don’t have time to prepare the stir-fry vegetables.
