One Pan Penne Pasta in a Tomato Ragu

This is a one pan pasta dish, that is packed full of comforting, robust tastes. Penne pasta, is cooked in a rich tomato ragu, soaking up all these wonderful flavours, then topped, with a generous amount of mozzarella and Parmesan, that is melted under the grill.

Ingredients

    500 g extra lean beef mince
    2 tbsp olive oil
    1 onion, peeled and finely chopped
    3 cloves of garlic, crushed
    1 orange bell pepper, deseeded and roughly chopped
    1 tin chopped tomatoes (400g)
    2 cups tomato purée
    1 tbsp tomato paste
    3 tsp sugar
    1 1/2 tsp smoked chilli flakes
    1 tbsp fresh thyme leaves, finely chopped
    1/2 tbsp fresh oregano, finely chopped
    1 small handful fresh basil, roughly chopped
    1 cup water
    3 cups penne pasta
    1/2 cup grated Parmesan cheese
    1 cup grated mozzarella cheese
    Freshly ground salt and pepper

Directions

    Heat the olive oil in a large oven-proof pan.
    Add the chopped onions, bell pepper, crushed garlic and gently fry until golden.
    Add the beef mince and continue to cook, until it has browned, slightly.
    Pour in the chopped tomatoes and tomato purée.
    Stir in, the tomato paste, sugar, smoked chilli flakes, fresh thyme, oregano and basil. Season well with freshly ground salt and pepper.
    Allow to cook at a simmer, for 10 - 15 mins, stirring regularly.
    Pour in the water and add the uncooked pasta.
    Stir, to make sure all the ingredients have been incorporated.
    Then place the lid on and cook for approximately 12 mins, until the pasta is al dente and the liquid has reduced.
    Sprinkle with the Parmesan cheese and mozzarella.
    Place under a grill, for 3-4 mins, until the mozzarella has melted.
    Allow to rest for 5 mins, then serve, garnished with fresh basil leaves.
