For the French Toast:
- 4 slices of French loaf
- 125ml (1/2 cup) aquafaba (chickpea water)
- 60ml (1/4 cup) Almond Breeze Sweetened Vanilla Milk
- 10ml (2 tsp) ground cinnamon
- 5ml (1 tsp) vanilla extract
For the Topping:
- 1 mango, peeled and sliced
- 60ml (1/4 cup) macadamia butter
- Maple syrup, to taste (optional)
Directions
For the French Toast:
- Combine the aquafaba, vanilla almond milk, cinnamon and vanilla extract and mix well.
- Heat a medium frying pan and add 10ml (2 tsp) coconut oil on a medium heat.
- Dip the French loaf slices very quickly into the aquafaba mixture – do not soak. Fry for about 4-5 minutes per side or until cooked and crispy.
- Top the French toast with macadamia butter, fresh mango and maple syrup.
