Whole Roasted Cauliflower with Herb Sauce

A whole roasted cauliflower is impressive to look at, and it’s secretly easy to make! Plus, it’s full of flavour and super healthy. A spicy, whole roasted cauliflower is great for a plant-based alternative to a classic roast. Even meat eaters will want a piece of this impressive, high-fibre veg dish. Not can this recipe be made into a vegan recipe, but it’s also low carb.

We slow-roasted an entire head of cauliflower to help reduce the bitterness and bring out a delicious nutty and buttery flavour. One of our all-time favourite ways to eat cauliflower! Are you ready to try this easy whole roasted cauliflower recipe?

Ingredients

For the Roasted Cauliflower:

  • 45ml (3 Tbsp) butter or plant-base margarine, melted
  • 2 garlic cloves, minced
  • 5ml (1 tsp) paprika
  • 10ml (2 tsp) parsley, finely chopped
  • Zest of 1 lemon
  • Salt and pepper, to taste
  • 1 whole cauliflower head

For the Herb Sauce:

  • 250ml (1 cup) Food Lover’s Market Plain Yoghurt (*Vegan substitute = Coconut cream, or plant-based yoghurt)
  • 15ml (1 Tbsp) coriander, finely chopped
  • 15ml (1 Tbsp) parsley, finely chopped
  • 10ml (2 tsp) mint
  • 15ml (1 Tbsp) Food Lover’s Signature Extra Virgin Olive Oil
  • 2.5ml (1/2 tsp) chilli flakes
  • Zest of 1 lemon
  • Salt and pepper, to taste

Directions

For the Roasted Cauliflower:

  1. Preheat your oven to 180°C.
  2. In a medium sized bowl, combine all ingredients except the cauliflower and mix well.
  3. Place the cauliflower head on a large piece of tinfoil and generously brush the butter mixture on until evenly coated. Wrap the cauliflower in the tinfoil and place on a tray. Cook for 40 – 50 minutes until soft, then place the cauliflower back in the oven uncovered for 10 minutes.
  4. Alternatively, air fry at 180°C for 30 – 40 minutes and 5 minutes uncovered.
  5. Serve warm with the herb sauce and enjoy.
  6. For the Herb Sauce:

    1. In a medium sized bowl, combine all the ingredients and mix well.
