Quick, ‘5-minute’ pasta sauces to use what’s in the fridge or whip up a quick mid-week meal. Blend up the sauce, and toss through your pasta of choice! You can also use leftover veggies or blitz-up fresh ingredients for the easiest and most uncomplicated sauce.

Avocado and Basil Sauce
- 2 ripe avocados
- 250ml (1 cup) fresh basil leaves
- 125ml (1/2 cup) almonds, roughly chopped
- ½ garlic glove
- Zest and juice of 1 lemon
- Salt and black pepper, to taste
Red Pepper and Tomato Sauce
- 4 red peppers, seeds removed and chopped
- 8 Rosa tomatoes, roasted
- 1 onion, roasted
- 3 garlic cloves, roasted
- Salt and black pepper, to taste
Ginger, Butternut and Carrot Sauce
- 7 medium carrots, roasted
- 500g butternut, roasted
- 1 onion, roasted
- 4 garlic cloves, roasted
- 15ml (1 Tbsp) fresh ginger, grated
- Salt and black pepper, to taste
Easy Peasy Cheesy Sauce
- 125ml (1/2 cup) cream
- 375ml (1 ½ cups) matured cheddar, grated
- Salt and black pepper, to taste
For the Pasta
- 4 - 6 Cups Pasta of your choice
Directions
Avocado and Basil Sauce
- Place all the sauce ingredients into a blender and blend until smooth. Season to taste. Combine with cooked pasta.
- Place the fresh peppers in a blender along with the roasted tomatoes, onion and garlic. Blend until smooth. Season to taste.
- Combine & Toss through the cooked pasta.
- Place all ingredients into a blender and blend until smooth. Season to taste.
- Combine & Toss through the cooked pasta.
- Heat the cream on a medium heat for about 2 minutes, add the grated cheese and stir for another minute to allow the cheese to melt. Season to taste.
- Combine & Toss through the cooked pasta.
