5 Minute Pasta Sauces

Quick, ‘5-minute’ pasta sauces to use what’s in the fridge or whip up a quick mid-week meal. Blend up the sauce, and toss through your pasta of choice! You can also use leftover veggies or blitz-up fresh ingredients for the easiest and most uncomplicated sauce.

Ingredients

Avocado and Basil Sauce

  • 2 ripe avocados
  • 250ml (1 cup) fresh basil leaves
  • 125ml (1/2 cup) almonds, roughly chopped
  • ½ garlic glove
  • Zest and juice of 1 lemon
  • Salt and black pepper, to taste

Red Pepper and Tomato Sauce

  • 4 red peppers, seeds removed and chopped
  • 8 Rosa tomatoes, roasted
  • 1 onion, roasted
  • 3 garlic cloves, roasted
  • Salt and black pepper, to taste

Ginger, Butternut and Carrot Sauce

  • 7 medium carrots, roasted
  • 500g butternut, roasted
  • 1 onion, roasted
  • 4 garlic cloves, roasted
  • 15ml (1 Tbsp) fresh ginger, grated
  • Salt and black pepper, to taste

Easy Peasy Cheesy Sauce

  • 125ml (1/2 cup) cream
  • 375ml (1 ½ cups) matured cheddar, grated
  • Salt and black pepper, to taste

For the Pasta

  • 4 - 6 Cups Pasta of your choice

Directions

Avocado and Basil Sauce

  1. Place all the sauce ingredients into a blender and blend until smooth. Season to taste. Combine with cooked pasta.
  2. Red Pepper and Tomato Sauce

    1. Place the fresh peppers in a blender along with the roasted tomatoes, onion and garlic. Blend until smooth. Season to taste.
    2. Combine & Toss through the cooked pasta.
    3. Ginger, Butternut and Carrot Sauce

      1. Place all ingredients into a blender and blend until smooth. Season to taste.
      2. Combine & Toss through the cooked pasta.
      3. Easy Peasy Cheesy Sauce

        1. Heat the cream on a medium heat for about 2 minutes, add the grated cheese and stir for another minute to allow the cheese to melt. Season to taste.
        2. Combine & Toss through the cooked pasta.
