Avocado Chocolate Brownies

Gooey, delicious chocolate brownies with avocado inside! Avocado acts as the healthy fat in these decadent brownies. Give it a go, and for those who don’t like avo – you’re still going to love these brownies!

Ingredients

  • 200g dark chocolate, chopped plus extra for serving
  • 2 medium/large avocados, mashed
  • 180 ml (¾ cup) dark brown sugar
  • 4 eggs
  • 80 ml (1/3 cup) cocoa powder, sifted
  • 180 ml (3/4 cup) flour, sifted
  • 125 ml (½ cup) almond flour
  • 5 ml (1 tsp) baking powder
  • 100 g pecan/walnuts nuts, toasted and chopped (*optional)

Directions

  1. Pre-heat the oven to 160°C.
  2. Line a 20 cm square baking tin with baking paper and spray with a non-stick cooking spray.
  3. Place the chocolate in a small saucepan over low heat and stir until melted and smooth.
  4. Remove from heat and allow to cool slightly. Add the smooth avocado and mix until well combined.
  5. Place the sugar, eggs, cocoa, flour, almond flour, and baking powder in a large mixing bowl. Add the chocolate mixture and pecan nuts and mix until just combined. Do not overmix!
  6. Pour the mixture into the prepared baking tin and bake for 25-30 minutes or until set.
  7. The secret to a perfect brownie is to bake it until just set and when a skewer is inserted it should not come out clean. The brownie needs to rest and cool completely before slicing.

Simply substitute the flour for gluten-free flour.

Want to make these chocolate avocado brownies healthier and refined sugar-free?

Substitute the sugar for coconut sugar, xylitol, or honey (use slightly less honey than the amount of sugar required). Replace the regular flour with gluten-free flour or with 1/2 a cup more Almond flour & 1 Tbsp coconut flour or flax powder.
