For the BBQ Chicken:
- 1 whole chicken
- 125ml (1/2 cup) BBQ marinade
- Zest and juice of 1 lemon
- 1 small butternut, peeled and cubed
- Salt and pepper, to taste
For the Crispy Chickpeas:
- 1 can chickpeas
- 2 garlic cloves, chopped
- 10ml (2 tsp) paprika
- 10ml (2 tsp) cumin
- 15ml (1 Tbsp) olive oil
For the Salad:
- 3 tomatoes, chopped
- 1 English cucumber, chopped
- 1 lettuce head, shredded
- 1 green bell pepper, cubed
- 1 small red onion, sliced
Directions
For the BBQ Chicken:
- Pre heat the oven to 180°C. Season the chicken well with salt and pepper. Brush with the BBQ marinade and finish with the zest and juice of 1 lemon. Place the butternut cubes around the chicken, season well with salt and black pepper and drizzle with a dash of olive oil.
- Place the chicken in an oven proof dish and roast for about 30-45 minutes or until cooked and golden brown. Allow to cool and shred the chicken. Mix the shredded chicken with the rest of the BBQ marinade and set aside until needed.
- Drain and rinse the chickpeas. Pat them dry with a kitchen towel and mix with the rest of the ingredients.
- Place on a baking tray and bake for 10-15 minutes in your pre heated oven until golden brown and crispy.
- Layer all ingredients in a jar or salad bowl with the shredded chicken, roasted butternut and crispy chickpeas.
