Ingredients

  • 60 ml (1/4 cup) butter
  • 1 onion, finely chopped
  • 1 large carrot, finely chopped
  • 2 – 3 garlic cloves, crushed
  • 5 ml (1 tsp) salt
  • Pepper, to taste
  • 2.5 ml (1/2 tsp) paprika
  • Pinch of ground nutmeg
  • 60 ml (1/4 cup) flour
  • 500 ml (2 cups) vegetable stock
  • 500 ml (2 cups) full cream milk
  • 750 ml (3 cups) broccoli florets, cut into small pieces
  • 500 ml (2 cups) Clover Cheddar Cheese
  • Parsley, to garnish

Directions

  1. In a large pot over medium heat, melt the butter and sauté the onion and carrot until soft and the onion is transparent. Add the garlic, salt, pepper, paprika and nutmeg and cook for another 3 – 5 minutes.
  2. Add the flour and cook for 5 minutes until slightly golden brown, then pour in the vegetable stock and milk and stir well. Add the broccoli florets and cook for 15 minutes until soft.
  3. Lastly, add the cheddar cheese, keeping a little extra for serving. Stir until fully melted and serve warm with a sprinkle of the cheese you kept aside. Enjoy!
