Ingredients

For the Cauliflower Buffalo Wings:

  • Canola oil, for frying
  • 180ml (3/4 cup) cake flour
  • 10ml (2 tsp) garlic powder
  • 10ml (2 tsp) onion powder
  • 10ml (2 tsp) smoked paprika
  • 2.5ml (1/2 tsp) cayenne pepper
  • Salt and pepper to taste
  • 160ml (2/3 cup) water
  • 1 large cauliflower, cut into florets

For the Buffalo Sauce:

  • 125ml (1/2 cup) El Burro Chilli and Lime Hot Sauce
  • 15ml (1 Tbsp) You First Coconut Oil
  • 5ml (1 tsp) apple cider vinegar
  • 15 ml (1 Tbsp) coconut sugar
  • 5ml (1 tsp) garlic powder
  • 5ml (1 tsp) onion powder
  • 10ml (2 tsp) smoked paprika

For the Pesto Mayo:

  • 125ml (1/2 cup) B-well Canola Mayonnaise
  • 60ml (1/4 cup) Food Lover’s Basil Pesto
  • Zest and juice of 1 lime
  • Salt and pepper, to taste

Directions

For the Cauliflower Buffalo Wings:

  1. Heat the canola oil in a medium pot on a moderate heat.
  2. In a large bowl, combine the cake flour, garlic powder, onion powder, paprika, cayenne pepper and seasoning. While whisking, slowly pour in the water and mix until smooth.
  3. Add the cauliflower florets to the mixture and evenly coat each piece, remove and shake off the excess. Fry in batches for about 5-8 minutes or until golden and crispy, drain on a kitchen towel.
  4. Preheat the air fryer/oven to 180˚ C.
  5. For the Buffalo Sauce:

    1. Place a small saucepan on medium heat. Add the hot sauce, coconut oil, apple cider vinegar, coconut sugar and spices, bring to a simmer and whisk for about 3-5 minutes until combined. Remove from the heat and set aside.
    2. Baste each piece of cauliflower with the buffalo sauce and bake in the oven for 10 minutes, or until crispy.
    3. For the Pesto Mayo:

      1. In a small bowl, add the mayonnaise, pesto, lime zest and juice and season to taste.
      2. Serve the hot, sticky cauliflower buffalo wings with the zesty pesto mayo and enjoy!
