Basic Sugar Cookie

Let’s go back to basics with a simple sugar cookie recipe for a light tea-time snack or an activity with the kids.

Ingredients

  • 250 ml (1 cup) salted butter, softened
  • 250 ml (1 cup) Food Lover’s Granulated White Sugar
  • 1 large egg
  • 15 ml (1 Tbsp) vanilla extract
  • 10 ml (2 tsp) baking powder
  • 530 ml (2 cups and 2 Tbsp) cake flour
  • Castor sugar for sprinkling, optional

Directions

  1. In a large mixing bowl, beat the butter and sugar until light and fluffy.
  2. Add the egg and vanilla and mix again for 2 – 3 minutes.
  3. Combine the baking powder and flour, adding the flour mixture 125ml (1/2 cup) at a time. Be careful not to overmix the dough. You should have a firm dough, but not dry or crumbly. If it is too crumbly, add milk 15ml (1 Tbsp) at a time.
  4. Shape the dough into a flattened square and wrap in plastic wrap or parchment paper. Rest the dough in the fridge for about 45 minutes – 1 hour.
  5. Preheat your oven to 180C and prepare 3 baking trays with parchment paper.
  6. On a lightly floured surface, roll the dough out to a thickness of 5 - 7mm. Using a cookie cutter of your choice about 7cm, cut out your cookies and transfer them onto your prepared baking trays.
  7. Bake for 10 – 12 minutes until golden brown. Sprinkle with castor sugar and allow the cookies to set before removing them from the tray. Serve straight away or allow to cool and store in an airtight container. Enjoy!
