Ingredients

  • 4 slices Ouma bread
  • 12 slices Food Lover’s Sandwich Ham
  • 9 large eggs
  • 45 ml (3 Tbsp) Dijon mustard
  • 375 ml (1 ½ cup) grated Gruyère or Grana Padano Cheese
  • 50 g Food Lover’s Salami, cut into smaller pieces
  • Italian parsley, to taste, chopped
  • Chives, to taste, sliced
  • Salt and black pepper, to taste

Directions

  1. Preheat the oven to 180°C.
  2. Cut the bread into 1-2cm cubes and crisp up in the oven for about 15 minutes. This is the perfect recipe where you can make use of stale bread, to minimise wastage.
  3. Spray a 12-hole muffin tray with non-stick spray and place a slice of ham in each muffin hole to form a base for the breakfast cups. Set aside until needed.
  4. Whisk the eggs in a large mixing bowl, then add the mustard, cheese, salami and parsley. Season to taste and add the Ouma bread croutons. Mix through and scoop the egg mixture into the prepared muffin tray.
  5. Bake for about 15 minutes or until cooked and golden. Sprinkle with chives and enjoy!
