For the Broth:
- 15 ml (1 Tbsp) vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 thumb ginger, grated
- 1 chilli, finely chopped
- 1 L (4 cups) beef stock
- 750 ml (3 cups) water
- 45 ml (3 Tbsp) light soy sauce
- 30 ml (2 Tbsp) rice wine vinegar
- 200 g (2 squares) Food Lover’s Market Egg Noodles
For the Toppings:
- 15 ml (1 Tbsp) vegetable oil
- 2 carrots, thinly sliced
- 1 punnet exotic mushrooms
- 250 ml (1 cup) baby spinach
- 2 soft boiled eggs, sliced lengthwise
- 1 sheet nori, thinly sliced into strips
- 1 spring onion, thinly sliced
- 1 red chilli, thinly sliced
- Sesame seeds, to taste
Directions
For the Broth:
- In a medium sized bowl over medium heat, add the oil and sauté the onions until soft. Add the garlic, ginger and chilli, cook for 1 minute.
- Add the beef stock, water, light soy sauce and rice wine vinegar. Simmer for 10 minutes. Add the egg noodles and simmer for another 5 minutes until cooked.
- In the meantime, place a non-stick frying pan with the oil over medium-high heat. Fry the carrots and exotic mushrooms until golden brown.
- Serve the broth and noodles in your chosen bowls and top with the carrots, mushrooms, baby spinach, egg, nori, spring onions, chilli and sesame seeds. Enjoy!
