Salmon Watermelon Ceviche

Have you ever tried salmon and watermelon? Summer is in, and this ceviche makes for a wholesome, easy and delicious salad. An easy recipe that just requires some chopping, and so worth the little effort it requires. The salmon is balanced with the fresh sweetness of watermelon, and the acidity of the citrus. This recipe is also no cook, which means it’s a perfect meal to make when there’s load shedding 😉 and through the summer heat.

Ingredients

  • 200 g salmon, skin removed and diced
  • 200 g watermelon, pips removed and finely diced
  • 2 spring onions, finely sliced
  • 1 small green pepper, seeds removed and finely diced
  • 1/2 small red onion, finely chopped
  • 1 ripe and ready avocado, cubed
  • Fresh coriander, chopped
  • Zest and juice of 1 lime (or lemon)
  • Zest and juice of 1 orange
  • 1 small red chilli, chopped (optional)
  • Nacho corn chips, to serve
  • Micro herbs or edible flowers, to garnish
  • Salt and black pepper, to taste

Directions

  1. Combine the salmon, watermelon, spring onions, green pepper, red onion, avocado, coriander, zest and juice of the lime and orange and the optional red chilli.
  2. Season with salt and black pepper, to taste, and mix everything together.
  3. Serve the watermelon and salmon ceviche with the nacho corn chips and garnish with micro herbs or edible flowers.
