Fresh checkerboard salad

A fresh summer salad that just looks way more impressive than you’re old-fashioned fruit salad bowl! This impressive checkerboard salad doesn’t require any special ingredients– just a little extra time cutting refreshing watermelon, cucumber and fresh summer fruits into cubes. Feta or Vegan feta adds a nice pop of saltiness while olive oil is a dash of flavour.

Ingredients

  • ¼ watermelon, cut into 3 cm cubes
  • 1 spanspek, cut into 3 cm cubes
  • 1 avocado, cut into 3 cm cubes
  • 1 cucumber, cut into 3 cm cubes
  • 150g cherry tomatoes, halved
  • 200g Violife Dairy-Free Greek White Cheese, cut into 3 cm cubes Or Food Lover’s Market Plain Feta, cut into 3 cm cubes
  • 30ml (2 Tbsp) olive oil
  • Juice of 1 lime
  • 1 spring onion, thinly sliced
  • Handful of basil
  • Salt and pepper, to taste

Directions

  1. On a large platter or plate, arrange the cubed melons, avocado, cucumber, tomatoes and vegan cheese or feta by alternating between them until the platter is covered.
  2. Drizzle the olive oil and lime and top with the spring onion, basil, and seasoning. Serve as a side and enjoy.
