Braaied Peaches

Summer is the time for braai and our favourite summer fruits! Quick cooking over hot flames brings out their natural juiciness and intensifies their deep summer sweetness. This dish is impressive, delicious and easy to make way quicker than a peach pie or crumble! Whilst braaied peaches are a perfect dessert for any braai or a camping trip, they also pair well as a side dish alongside pork chops, or in a fresh green salad.  It’s also a healthier dessert for those who aren’t in for a sugary peach pudding.

Ingredients

  • 1 can Food Lover’s Market Coconut Cream, refrigerated overnight
  • 2 peaches, halved and pit removed
  • 15 ml (1 Tbsp) brown sugar, or coconut sugar
  • 5 ml (1 tsp) cinnamon
  • 50g Happy Earth People Vegan Biscuits, roughly crushed (*or biscuits of choice - see suggestions in notes below).

Directions

  1. Open the tin of coconut cream and scoop the cream off the top layer, leaving the water at the bottom. Whip the coconut cream for a minute with an electric beater to loosen it up and set aside in the refrigerator.
  2. Sprinkle the sugar and cinnamon over the halved peaches and place on a grid over medium hot coals. Cook for 5 minutes or until the peaches are caramelised on the top.
  3. Serve the peaches warm with the coconut cream and roughly crushed biscuits.

Notes

*Note – clean your grill before braai’ing the peaches. You might end up with boerie flavours peaches ;).
