3 ways with Salad in a Jar

Make-ahead salad in a jar is perfect for healthy meal prep. Why use a jar? Not on is a jar an easy portable to-go container, but they are also easy to clean and can stay fresh for longer in the fridge. Separating the ingredients into layers helps to avoid mushy soggy salads; that’s why we start with layering the dressing at the bottom then the harder veggies or grains, followed by softer veggies and fruits then your protein, and finally topped with your fresh greens. When you’re ready to eat, all you have to do is shake it up.

These salad jars are perfect if you feel that life is too busy to have time to make healthy lunches every day.

Ingredients

Black Bean Jar Salad

  • 125ml (1/2 cup) tinned black beans, drained and rinsed
  • 125ml (1/2 cup) tinned black beans, drained and rinsed 250 ml (1 cup) quinoa, cooked
  • 80ml (1/4 cup) corn kernels
  • Half a red pepper, diced
  • 60ml (1/4 cup) cucumber, diced
  • 15ml (1 Tbsp) sunflower seeds, toasted

Black Bean Jar Salad Dressing:

  • 80ml (1/3 cup) tahini paste
  • 30ml (2 Tbsp) olive oil
  • 5ml (1 tsp) mustard
  • 30ml (2 Tbsp) lemon juice
  • 5ml (1 tsp) honey
  • 1 clove garlic
  • 30ml (2 Tbsp) water
  • Salt and pepper

Asian Slaw Jar Salad

  • 80ml (1/3 cup) red cabbage, shredded
  • 80ml (1/3 cup) white cabbage, shredded
  • 80ml (1/3 cup) carrot, peeled & grated
  • 60ml (1/4 cup) red onion, thinly sliced
  • 80ml (1/3 cup) mange tout, thinly sliced
  • 60ml (1/4 cup) peas
  • 45ml (3 Tbsp) raisins
  • 15ml (1 Tbsp) sesame seeds, toasted
  • Fresh coriander

Asian Jar Salad Dressing

  • 45ml (3 Tbsp) soy sauce
  • 15ml (1 Tbsp) sesame oil
  • 15ml (1 Tbsp) olive oil
  • 15ml (1 Tbsp) vinegar
  • 15ml (1 Tbsp) honey
  • 5ml (1 tsp) chilli, finely cut
  • 10ml (2 tsp) ginger, finely cut
  • 5ml (1 tsp) garlic, finely cut

Chicken Jar Salad

  • 125ml (1/2 cup) shredded chicken
  • 250ml (1/2 cup) fusilli pasta, cooked
  • 80ml (1/3 cup) green beans, cut into 2 cm pieces (optional)
  • 80ml (1/3 cup) baby tomatoes, quartered
  • Half a yellow pepper, diced
  • Half an avocado, diced (optional)
  • 60ml (1/4 cup) feta, crumbled

Chicken Jar Salad Dressing

  • 375ml (1 1/2 cups) fresh basil
  • 30ml (2 Tbsp) olive oil
  • 15ml (1 Tbsp) lemon juice
  • 1 garlic clove
  • Lemon zest
  • Salt and pepper

Directions

Black Bean Salad:

  1. For the black bean jar salad dressing: Combine all the ingredients together.
  2. Pour the dressing in the bottom of the jar and layer each ingredient on top, one at a time. (*See tip in notes below)

    1. For the dressing: Combine all the ingredients together.

      1. Blend all the ingredients together in a food processor.
      2. Pour the dressing in the bottom of the jar and layer each ingredient on top, one at a time. (*See tip in notes below)
