Summer Mango and Feta Salad with a Chilli Lime Dressing

Summer is in full swing and there is no better way to enjoy these hot summer days, than with a refreshing mango salad. To complement the sweetness of this delicious fleshy fruit, we have combined the tart flavour of lime, with honey and fresh chilli, in a dressing. Serve this mouthwatering salad with some sticky barbecue ribs, or enjoy as a meal on its own.

Ingredients

  • 200 g baby spinach leaves
  • 3 mangoes peeled, cut into slices
  • 1/2 English cucumber, sliced
  • 2 red spring onions, finely sliced
  • 1/4 cup cup feta cheese, crumbled

CHILLI, LIME & HONEY DRESSING

  • 4 tbsp freshly squeezed lime juice
  • 4 tbsp honey
  • 3 tbsp extra virgin olive oil
  • 1 red chilli, deseeded, finely sliced
  • Freshly ground salt and pepper

Directions

    a small bowl, whisk together, the lime juice, honey, extra virgin olive oil, finely sliced chilli and some freshly ground salt and pepper.
    Once the liquid has amalgamated well, pour the dressing over the salad and serve immediately.

  1. Sprinkle the spinach leaves over a platter and drop the cucumber slices evenly over the top.
  2. Nestle the mango slices in amongst the spinach leaves.
  3. Sprinkle the spring onion and crumbled feta over the top, making sure to distribute it all evenly.
