A fruit platter is perfect for summer entertaining. In the season synonymous with indulging a little too much, a platter of fresh, summer fruits, ready to enjoy and a fruit popsicle would be well received.
Try to combine different styles, textures and colours to make it vibrant. Why not get out your Christmas cookie cutters and cut out some Instagram-worthy shapes.

Ingredients

8-10 Triangles of Watermelon
1/2 Spanspek, deseeded, cut lengthways into slices
12 Apricots, halved
8 Plums, halved
5 Nectarines, halved and cut into quarters
5 Dessert peaches, halved and cut into quarters
2 Bunches white grapes
250 g Strawberries
250 g Blueberries
250 g Raspberries
For the Lemon Popsicles

1 cup Water
3/4 cup Granulated sugar
2 zest of 2 lemons
1 cup Freshly squeezed lemon juice
Directions
For the Lemon popsicles:

In a small pot, combine the sugar and water and heat until the sugar has dissolved, stirring frequently.
Add the lemon zest and bring to a simmer.
Remove from heat and allow to cool.
Once cooled, pour the sugar mixture through a strainer over the bowl of lemon juice.
Stir the strained sugar mixture and lemon juice and set aside.
Choose whichever fruit you like and cut to the appropriate size, then drop a piece into a Popsicle mold.
Now fill the molds up with lemon juice.
Freeze for approximately 30 minutes and then remove the molds from the freezer and place a Popsicle stick in each mold.
Put the Popsicles back into the freezer and freeze for 1 to 2 hours.
When you are ready to serve, let hot water run over the Popsicle mold for 10 seconds.
To assemble to fruit board:

Arrange the watermelon, spanspek, apricots, plums, nectarines, peaches, grapes and berries on a serving board or platter.
Nestle the Ice Popsicle amongst the fruit and serve immediately.
