Watermelon and Blueberry Mojito Ice Popsicles

Ice lollies (popsicles) are a fun and refreshing way to enjoy the start of the watermelon season, and so are cocktails…enter; the Blueberry Watermelon Mojito Ice Popsicle! Here we have blended watermelon and our favourite cocktail , to make the perfect thirst quenching adult treat. If you want to make them child friendly, just leave out the rum.

Cooking Methods

  • Freezing

Ingredients

    4 cups watermelon cut into cubes
    1/2 cup white rum
    1/4 cup lemon juice
    1/4 cup cocktail syrup
    10 large fresh mint leaves chopped
    3/4 cup blueberries

Directions

    Place all the ingredients into a blender, except the blueberries.
    Blitz on high until all the ingredients are well incorporated.
    Pour through a sieve, squeezing as much of the pulp through as possible.
    Drop a couple of blueberries into each popsicle holder, then fill them with the blended watermelon mixture.
    Place tin foil over the holders, make a small slit in the middle and place a wooden stick into this.
    Place them into the freezer overnight or until frozen.
