Apricot Ice Pops

Apricot jam brings a nostalgia for childhood. Beautifully reworked in this summer ice pop. No need buy ice lollies high in sugar and preservative when it’s so easy and affordable to make your own healthier pops at home.

Ingredients

Ice pops

    4 apricots
    Yoghurt
    Apricot jam

Directions

Ice pops

    Take 2 apricots and cut them into slices and drop into your moulds.
    Blend the remaining apricots, yoghurt and jam until smooth.
    Pour the mixture into your moulds.
    Tap to make sure there are no air bubbles.
    Place in the sticks.
    Freeze until solid.
    Once frozen, your can dip the tops into apricot jam, to garnish. (Optional)
    Serve immediately.

Notes

Sprinkle flaked almonds will add an extra flair, protein and crunch to this pop. YOu can try this recipe with any stone fruit from Food Lover’s Market such as peach or plum. Just add more jam or sugar should the fruit be more tart.
