Snoek with Orange and Fennel

A South African favourite, grilled snoek! This time, we’ve paired local snoek with sweet, seasonal citrus and fennel, a flavour of dreams!

Ingredients

  • 1kg Food Lover’s Market Snoek, thawed
  • 30ml (2 Tbsp) olive oil
  • 45ml (3 Tbsp) orange marmalade
  • 2 oranges
  • 100g fresh baby fennel, sliced in half lengthwise
  • Salt and black pepper, to taste

Directions

  1. Preheat the oven to 180 °C. Line a baking tray with foil and drizzle with olive oil.
  2. Place the snoek opened up on the baking tray with the skin side down. Spread the orange marmalade on the snoek, followed by the zest and juice of 1 orange.
  3. Season to taste and place the fennel around the snoek. Bake in the oven for about 35-40 minutes.
  4. While the snoek is in the oven, slice the second orange in rings and heat a non-stick frying pan with a dash of olive oil on a high heat. Sear the orange slices on one side only until browned or if preferred you can pack the slices on the fish to roast in the oven.
  5. Serve the baked snoek and fennel and garnish with the browned orange slices.
