Very Berry Chia Pudding

Chia pudding is a simple, pleasing breakfast option, with a light, fluffy texture, packed full of seed protein and fibre benefits. The fruit adds flavour and sweetness. It can be prepared the day before.

Ingredients

For the pudding

    750ml (3 cups) coconut milk
    250ml (1 cup) chia seeds
    45ml (3 Tbsp) honey
    10ml (2 tsp) vanilla extract

To Garnish

    250g Food Lover’s Market Strawberries
    125g Food Lover’s Market Blueberries
    Fresh mint
    Honey, to taste

Directions

For the pudding

    In a large bowl, combine the coconut milk, chia seeds, honey and vanilla extract.
    Place in the fridge for at least 3 hours to thicken.
    Dish the chia pudding into glass jars.

To Garnish

    Garnish with strawberries, blueberries and mint.
    Drizzle with honey and enjoy.

Notes

Chia seeds are superfoods, high in healthy fats, fibre and protein and this dish can be eaten for breakfast, a snack or dessert!
The basic ratio of chia seeds to liquid is 1:3 so you can adjust the recipe to make just a breakfast for yourself, or simply teaspoon to top your muesli, oats or pop into your smoothie.
