Mac and Cheese Bowls with Broccoli

These little bowls are right on trend and should definitely top your Spring-time menu!

Ingredients

    200 g broccoli florets
    250 g macaroni
    20 g butter
    20 g flour
    1 cup milk
    1/2 cup grated cheddar cheese, plus a little extra for topping

Directions

    Place a medium sized pot of water onto boil.
    Add the broccoli to the boiling water and simmer for 2 – 3 minutes until just cooked through.
    Remove from the water and set aside.
    Place the pasta into the boiling water and boil for 5 minutes, remove and drain.
    Set aside to cool.
    Preheat the oven to 160°c.
    Melt the butter in a small pot over a low heat, add the flour and cook for 2 minutes. Remove from the heat, slowly stirring in the milk, ensuring there are no lumps.
    Once all the milk is incorporated place the pot back on the heat and bring to a gentle simmer.
    Add the cheese, season to taste and remove.
    Add the pasta and broccoli to the cheese sauce and stir through.
    Spoon the filling into ovenproof bowls, top with a little extra grated cheese.
    Place the bowls onto a baking tray and bake for 5 – 10 minutes or until the cheese is melted.
    Remove from the oven and serve.
