Harissa Corn “Ribs” – Plant-based

Corn ‘ribs’ are another Tiktok recipe trend. It takes your regular grilled corn on the cob and turns it into crunchy pieces, easy to dip into your favourite sauce, and enjoy ‘off the bone (cob)’ as you would ribs! Crispy and flavour-packed outside, with tender, sweet juicy corn in the middle, you need to try this plant-based ‘rib’ recipe. Enjoy them as a snack, served with a platter, or as a delish side dish.

This recipe is suitable for a vegan (no feta topping), vegetarian, and gluten-free diet.

Ingredients

  • 4 corn on the cob (Mielies)
  • 100 g butter, softened
  • 3 cloves garlic, crushed
  • 5 ml (1 tsp) ground cumin
  • 5 ml (1 tsp) paprika
  • 5 ml (1 tsp) ground coriander
  • 5 ml (1 tsp) chilli flakes
  • 60 ml (4 Tbsp) mayonnaise (Food Lover's Canola Mayo is vegan-friendly)
  • Handful of coriander, finely chopped (*or Food Lover's Hemp & Coriander Pesto)
  • Handful of parsley, finely chopped
  • Salt and black pepper, to taste
  • 1 wheel of feta, crumbled (leave-out for a vegan option)
  • 1 - 2 limes, cut into wedges
  • Fresh coriander, to taste

Directions

  1. VERY CAREFULLY, cut each corn lengthways (vertically) through the cob into quarters and set aside. (*see note below)
  2. In a medium size bowl mix the butter, garlic, cumin, paprika, coriander, chilli flakes, salt and pepper together into a paste.
  3. Spread the spiced butter onto all sides of the corn quarters. Heat a griddle pan to a medium to high heat and grill the corn until charred on the oustide and cooked through.
  4. In a separate bowl, mix the mayo, coriander and parsley and season to taste.
  5. Serve the corn with the mayo sauce, crumbled feta (*optional), lime wedges and fresh coriander.

Notes

Be careful chopping the corn!

Chopping the corn down the length CAN be dangerous, and the last thing we need is an accident. Alternatively, chop the cobs in half first – the ‘shorter’ pieces will be easier to chop while standing vertical on the surface. You could also par-boil the corn so that it is easier to cut, and then grill for less time than in the recipe.

If you’re still nervous about it, then skip this one – don’t worry, the whole corn on the cob will taste just as good with the same seasonings and dip.

Can I make these corn ribs in an air fryer?

Yes, you can.  Fry the prepared corn pieces in the air fryer for about 10 minutes.
