Here’s what you need:

Ingredients
4 chicken thighs
4 chicken drumsticks
1 cup long-grain rice
100g each red onion and peppers
2 cloves garlic finely chopped
25g brown onion soup
3 cups boiling water
1 can chopped tomatoes

1. Spice your chicken ‘mooi’, I used chicken spice, paprika and garlic salt
2. Add your chicken to a hot pan and brown on each side
3. Add your rice to a large baking dish and top with your grilled chicken then set aside
4. Dice up your peppers, onion and garlic, add them to the same pan, and then sauté until soft. Once soft add to your chicken
5. Combine your brown onion soup with your boiling water and mix well
6. Add your canned tomatoes on top of your chicken and using a spatula or spoon spread out evenly
7. Gently pour in your stock then bake in the oven at 180 degrees covered for 50 minutes and uncovered for 10 minutes
