Crispy Banana and Strawberry Puffs

A super tasty, crispy and sweet puff that is perfect for any treat or dessert.

For the Strawberry Jam:

    250 g Food Lover’s Sassy Strawberries, roughly chopped

    60 ml (1/4 cup) sugar

    15 ml (1 Tbsp) lemon juice

For the Banana and Strawberry Puffs:

    4 Food Lover’s Bananas

    125 ml (1/2 cup) strawberry jam

    400 g (1 roll) puff pastry

    1 egg, beaten

    20 ml (4 tsp) brown sugar

    30 g dark chocolate, melted


For the Strawberry Jam:

    In a medium sized saucepan over medium heat, combine the strawberries, sugar and lemon juice and simmer for 30 minutes until the mixture has thickened. Test it is done by putting a small amount on a spoon and letting it cool slightly. Drag your finger through the jam and if a clear line remains, you know it's done. If the jam spreads back over the spoon, simmer the mixture for a few more minutes until the test works.

For the Banana and Strawberry Puffs:

    Preheat your oven to 180°C and line a baking tray with parchment paper.
    Peel the bananas and halve them lengthways.
    Unroll the puff pastry and cut into 10 cm squares. On each square, spread 15 ml (1 Tbsp) of the strawberry jam diagonally from one corner to the opposite corner. Place the banana halves down the middle over the jam. Pinch the opposite sides of the puff pastry to seal it and fold it over the banana.
    Brush the pastry with egg and sprinkle with a big pinch of brown sugar. Bake for 25 – 35 minutes until the pastry is golden brown and cooked through.
    Serve warm with a drizzle of dark chocolate and enjoy!
