Ingredients

Watermelon Rind Tzatziki

  • 250ml (1 cup) watermelon rind, grated
  • 250ml (1 cup) Food Lover’s Plain Yoghurt
  • 15ml (1 Tbsp) olive oil
  • 15ml (1 Tbsp) lemon juice
  • Zest of ½ a lemon
  • 15ml (1 Tbsp) mint, finely chopped
  • Salt and pepper, to taste

Serve with Grilled Chicken Gyros:

  • 4 pita breads
  • 30ml (2 Tbsp) olive oil
  • 2 tomatoes, cut into small cubes
  • ½ a cucumber, cut into small cubes
  • ½ a red onion, thinly sliced

Directions

Watermelon Rind Tzatziki

  1. In a large bowl, combine all the ingredients and mix well. Set aside.
  2. For the Grilled Chicken Gyro:

    1. In a large bowl, combine the first eight ingredients and mix well. Add the chicken strips and stir until well coated. Cover and place in the fridge to marinate for 1-2 hours.
    2. Using a griddle pan over medium heat, cook the marinated chicken until golden brown and cooked through.
    3. In a griddle pan over medium heat, brush the pitas with the oil and place them in the pan to toast slightly and get some colour.
    4. Smear the watermelon rind tzatziki onto the pitas and top with the grilled chicken, tomato, cucumber, and red onion.
    5. Fold the pita around the fillings and enjoy.
