Pancake Pasta

A trending recipe online, have you seen the pancake pasta? Looks like spaghetti but is actually pancake, and is easier than you think. Tossed through a drizzle of honey and syrup, plus some melted butter if you’re feeling really indulgent, and paired with sliced fruit. We tried it – we may prefer filled crepes or a pancake stack, but you’ve got to try it and see what you think. This pancake pasta is a really fun recipe for the kids.

Ingredients

Pancake Mixture

  • 250 ml (1 cup) cake flour
  • 250 ml (1 cup) milk
  • 1 large egg
  • 5 ml (1 tsp) vanilla extract

  • 80 ml (1/3 cup) Food Lover’s Market Honey
  • 15 ml (1 Tbsp) lemon juice
  • 10 Strawberries, sliced or cut into pieces
  • Blueberries, as you desire
  • Cinnamon, to taste

Directions

  1. In a large mixing bowl, combine all the ingredients together and whisk well until smooth. Transfer the mixture into a piping bag and set aside.
  2. Over medium heat in a non-stick pan, cut the tip off the piping bag creating a small nozzle and pipe and spiral in the pan. Cook for 3 – 5 minutes until golden brown on the bottom. Remove from the pan and repeat until the pancake mixture is done.
  3. In a small bowl, combine the honey and lemon juice together and mix well.
  4. Place the pancake pasta in your chosen bowls and drizzle with the honey and lemon mixture. Top with your fruit, sprinkle with cinnamon and enjoy.
