Healthy Pancake Tacos

Have you tried a pancake taco? This recipe makes them into a healthy breakfast so you can enjoy pancakes for breakfast without the guilt. Simple banana pancakes with bananas, egg and oats made into thicker pancakes, made into a ‘taco’ shell by filling them with your favourite summer fruits, and drizzled with nut butter and honey.

For the Pancakes:
- 2 large bananas
- 2 large eggs
- 250ml (1 cup) oats
For the Filling:
- 250ml (1 cup) yoghurt of your choice
- 1 mango, peeled and chopped into small cubes
- 6 strawberries, sliced
- 1/2 punnet Food Lover’s Market Buzzing Blueberries
- Fresh mint, to garnish
- 45ml (3 Tbsp) almond nut butter, to drizzle
- Honey, to drizzle (optional)
Directions
For the Pancakes:
- Mash the bananas slightly. Put the bananas, eggs and oats in a blender and blend to a smooth consistency.
- Heat a frying pan with a dash of olive oil on a medium heat.
- Scoop about 60 ml (1/4 cup) of the pancake mix into the pan and fry for about 2 minutes per side. Repeat this process with all the batter.
- To fill the pancake tacos, line them up against each other in a bowl to shape them like taco shells.
- Add some yoghurt and top with berries and fresh mint. Drizzle with the nut butter and optional honey for some sweetness.
