Watermelon and Halloumi Skewers with Lemon Dressing

If you have tried feta and watermelon together, you know that watermelon and salty cheese are a winning combination. Summer is watermelon season in South Africa. These grilled watermelon and halloumi skewers are the perfect sweet, savoury, smoky and fresh combo. You can grill these skewers on the stovetop or the braai. We made a refreshing lemony drizzle using freshly squeezed lemons, avocado oil and garlic which takes the flavour to new heights.

These skewers are great for a weekend braai, or easy fresh appetizer, interesting side dish or even done as a vegetarian main meal.

Ingredients

For the Skewers:

  • 300g halloumi cheese
  • 15ml (1 Tbsp) butter
  • Juice of ½ lemon
  • 300g watermelon cubes
  • Fresh basil leaves
  • Salt, to taste
  • 6 wooden skewers

For the Dressing:

  • 30ml (2 Tbsp) lemon juice
  • 60ml (1/4 cup) avocado oil
  • Zest of 1 lemon
  • 1 small garlic clove, peeled and crushed
  • Salt and black pepper, to taste

Directions

For the Skewers:

  1. Cut the halloumi cheese into blocks that are roughly the same size as the watermelon cubes.
  2. Heat a frying pan on a medium to high heat with the butter. Fry the halloumi cubes on all sides for about 5 minutes. Season with salt and lemon juice.
  3. Skewer the watermelon cubes, pan fried halloumi and basil leaves onto the wooden skewers, in any order you prefer.
  4. For the Dressing:

    1. Combine all ingredients in a jar and shake to emulsify. Season to taste and drizzle over the watermelon and halloumi skewers.
